Seafood Gumbo
- 1/2 lb. bacon, diced
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup green pepper, diced
- 2 cloves garlic, crushed
- 1 tsp. basil
- 1 tsp. oregano
- 2 tsp. salt
- 1 tsp. pepper
- 2 cups clam juice
- 2 cups water
- 1-2 lbs. can tomatoes, chopped with liquid
- 2 pkgs. frozen okra
- 2 lbs. shrimp, peeled, deveined, and cooked
- 1 lb. diced fish (tridbot, flounder, or haddock)
- 1 lb. cooked scallops
- 1 cup cooked rice
- 1 cup white wine
- 1 cup sherry
In large (6 qt.) soup pot, saute bacon until cooked. Add onion, celery, green pepper, garlic, and spices. Cook for 10 minutes until vegetables are tender. Add clam juice, water, tomatoes, and okra. Cook for 15 minutes. Add remaining ingredients and simmer for 30 minutes.
